SPICED LENTIL SOUP

Ingredients:

4 tb olive oil
1 large onion, diced
3 stalks celery, diced
3 large carrots, diced
1 tsp turmeric
1 tsp cumin
1 tsp harissa or cayenne
Salt to taste
1 bunch cilantro, chopped
1 can tomatoes crushed or 1.5 cups tomato sauce
7 cups chicken or veg stock
1 cup canned chickpeas, drained
1.5 cup green lentils
1 tsp black pepper
2 tbsp all purpose unbleached flour
1 large egg
1/4 cup fresh lemon juice

Steps:

1. Heat oil in large skillet over medium heat and saute onion, celery and carrots until onion begins to slightly brown. Add turmeric, cumin, harissa/cayenne, 1 tsp salt, cilantro, tomatoes and broth. Bring to a boil then simmer uncovered for 25 minutes. Add lentils and chickpeas, another tsp of salt and black pepper and continue simmering for another 20 minutes.

2. Whisk flour, egg, lemon juice and 2 cups of water. Stir into soup and simmer for about 5 more minutes.
